Go meatless just one day a week

Most Americans love a burger (or bacon), but we also know there can be too much of a good thing. Studies continually point out that eating a lot of meat leads to heart disease and cancer. Plus, worldwide livestock farming creates 18% of all greenhouse gas emissions -- that's a little bit more than the world's transportation emissions. But it's pretty easy to improve our health and the planet's and still enjoy our food.

The Johns Hopkins School of Public Health suggests we go meatless on Mondays. Just one day a week without meat can reduce your consumption of saturated fat by 15% and reduce your chances of heart disease. Scientists estimate that if every American lowered meat consumption by just 20%, it would lower greenhouse gasses as much as if everyone in the country switched to driving Toyota Priuses (and think how much cheaper and easier eating less meat is!).

The Meatless Monday website is chock full of tasty recipes and tips for making healthy meals based around vegetables and grains. You'll find tons more recipes online to suit every palate and price range. Some wonderful ethnic foods (even at restaurants) are often vegetarian too. For example, consider Italian pastas heavy on tomato sauces and veggies or spicy Indian curries served over rice.

An extra bonus is that cooking with meat less often saves you money. Fresh, canned, and frozen vegetables are almost always less expensive than meat at the grocery store. Grains, rice, and pasta are affordable, especially when bought in bulk.

Excellent idea. I have myself been vegetarian, vegan, and pescetarian now for 17 years. What you decide to put in your body is a personal choice and while I do believe the ideal diet is vegan-it's not for all and I have always been a proponent of the idea that even if you do eat meat, amazing benefits to your body and the planet can occur if you cut back and add more plant based foods. Check out Vegan Planet, it's a great cookbook. You can check out others from your library or used bookstore to get great ideas for what to add to your diet. You may come to realize that vegetables can be quite tasty, and of course healthy.Enjoy!

Duh, old idea from WWII when meat was strictly rationed. Nothing new here, just re-introduced.

I'm taking this a step further. I'm already vegetarian, but I can try going vegan one day a week. "Vegan Mondays" doesn't have as cool a ring to it though. ha.

i'm a vegetarian, and it's a great idea to not eat meat at least once a week. another article said not to eat meat just one meal a day, and that may be even better... i'm not sure i'm not gonna do the math. the rest of my family is carnivorous, and i dont think i'm gonna turn them anytime soon, even if it is just one day

riaveg22--- eating just one meal a day is dangerous for your body, which runs on an internal clock. Not eating regularily can actually cause over-eating... not to mention poor judgement and the nagging irritation hunger brings with it. Your brain needs food. Food is good for the mind, body, and soul (ask any holocaust survivor for the "soul" part. Not eating frequently enough can cause extreme mental distress.) Introducing veggie days is healthy, since many of us don't get enough vegetables. But you won't reap any health benefits from veggies if you confine your eating to one meal a day.

Our family has always been big on eating their veggies and fruit. We encouraged this at a young age not forced. They now prepare many meatless meals regularly and we're not vegetarians or anything like that. Just balanced. We'd rather spend the $$ on fresh foods than doctor visits and pills to fix what is really due to poor nutrition. (We still go to the doc and use meds if needed) Not to mention homemade fresh chicken soup too. :)
